Lazy Baker’s Peanut Butter Cookies
These are the easiest cookies on the planet to make and they take no time. Plus, you always have the three ingredients in your cupboard (unless there’s something wrong with you and you don’t like peanut butter).
They are the perfect last-minute throw-together dessert or hello/get well/feel better/welcome to the neighborhood offering. But they can also be dressed up with chocolate chips or M & M’s, or decorated with red or green sprinkles, making them a solid addition to a plate of Christmas cookies. (I will admit they aren’t the most gorgeous cookies on the planet, but it just goes to show, you can’t quite have it all.)
Okay, ready? Here we go.
—1 egg
—1 cup sugar
—1 cup peanut butter
Mix and drop by spoonfuls onto a baking sheet sprayed with PAM, or use a Silpat or parchment if you want to get fancy.
Dip a fork in water and do the crosshatch thing on top of the cookies if you like. You can also sprinkle plain old-fashioned sugar on them, but I never do.
Cook at 350 for 10-12 minutes, or maybe longer, depending on how you like them.
